After a late-night Pinterest binge (we’ve all been there), I stumbled upon a four-ingredient recipe that’s quick, easy, and healthy—perfect for school lunch boxes or after-school snacks and for busy parents seeking healthy snack options.
I’ve been on a mission to limit processed sugars and boost the fibre content in my kids meals. So, I was thrilled to discover a recipe that features a sneaky veggie without the kids knowing! I did opt to switch out the cocoa powder for a more healthier option of cacao powder, and it tastes incredible! Even my fussiest child gave it the green light. When I was prompted by my 8 year old to share my recipe details, she immediately pulled a face at the mention of peanut butter - even though she's devoured countless peanut butter sandwiches. Kids, right? So for the benefit of both of us, she believes it's a 3 ingredient recipe, because I may have mentioned sweet potato under my breath, or just not at all! Parents, right?
Anyway, let's get back to the stars of the show:

Sweet Potato Brownies Recipe
Ingredients:
- 1 cup cooked, mashed sweet potatoes
- 1/4 cup cacao powder
- 1/2 cup nut butter (e.g., almond or peanut butter)
- 1/4 cup maple syrup
Method:
- Preheat your oven to 175°C (350°F).
- In a food processor, combine all the ingredients until smooth.
- Pour the mixture into a small loaf pan and spread it evenly.
- Bake for 12-15 minutes, or until set. Allow to cool before slicing.
* I added mine to muffin cups instead to add them straight into the lunch boxes
